We are always looking for new ways to add something exciting to our series of guest bowls and keep our loyal poké lovers happy. After many incredible London-centric collabs, we wanted to take inspiration from across the pond for something a little different.
The Los Angeles area is filled with restaurants offering fresh, light and healthy dishes with punchy flavours, very in keeping with our own style of food. So, we were honoured to be able to partner with none-other than renowned LA chef Nancy Silverton on this offering. Nancy is basically cooking royalty, she has written eight cookbooks spanning three decades, worked with the likes of Wolfgang Puck and is a long-established name on the LA food scene. In 2014, she was named ‘Outstanding Chef’ by New York’s James Beard Foundation, before her work was profiled during the 2017 series of Netflix’s Chef’s Table. We could not wait to see what this queen of cooking would come up with.
The clever and classy Salmon Poké Nicoise Bowl is a twist on our classic poké inspired by the Mediterranean flavours used in Nancy’s own Los Angeles restaurants (Osteria Mozza and Pizzeria Mozza). A lemon and anchovy vinaigrette and an olive tapenade infused a salad leaf base. On top of this were layers of sliced new potatoes, cherry tomatoes, edamame beans, green olive ciabatta croutons, sashimi-grade salmon, capers and what Silverton describes as ‘the perfect set egg’. It was basically spring time in a bowl!
Nancy was just as thrilled to be a part of London’s electric food scene as we were to have her, and she made our day by flying all the way over to make up some bowls for us and sign autographs. This is a collab that will go down in history as one of the most illustrious yet.
